Ingredients

1. Zucchini, grated - 3 cups
2. Mozzarella cheese, shredded - 1 cup
3. Parmesan cheese, grated - ½ cup
4. Breadcrumbs - ½ cup
5. All-purpose flour - ¼ cup
6. Onion, finely chopped - 1 medium
7. Dill, chopped - 2 tablespoons
8. Eggs, beaten - 2
9. Salt - â…› teaspoon
10. Black pepper - ¼ teaspoon (you can add more according to your taste)
11. Vegetable oil - 2 tablespoons (needed for frying)

Directions

1. Commence your work by taking a large-size bowl and line it with paper towels.

2. Now, grate the zucchini in this big prepared bowl and strain all its water by using paper towels that are lined at the bottom.

3. Another method you can use to grate zucchini is by using a colander. After grating, add a teaspoon of salt into a grated zucchini bowl and toss it. Then, with the help of a paper towel, drain all the water from the grated zucchini.

4. Now, in a large bowl, add the following ingredients, i.e., grated zucchini, mozzarella cheese, Parmesan cheese, flour, onion, breadcrumbs, beaten eggs, and lastly the seasonings such as salt and black pepper. Mix these constituents really well.

5. Now, heat a tablespoon of vegetable oil in a skillet to shallow fry the patties. There are two options: either you can make patties from this mixture, or you can use a spoon to put the zucchini mixture in small amounts in a pan.

6. Avoid overcrowding a pan with the zucchini patties. Fry the zucchini patties on both sides till golden brown.

7. Replicate the similar steps with the remaining zucchini mixture.

8. Drain cooked zucchini patties on a paper towel-lined plate.

9. Serve these zucchini patties warm either by themselves or with a ranch dressing.

RECIPE NOTES:

1. If the consistency of the zucchini mixture is too thin, then add more all-purpose flour.

2. Be sure that the grated zucchini is completely drained; otherwise, patties will not be crispy as it supposed to be.

3. Other ingredients that you can add are mayonnaise - 2 tablespoons and oregano - ¼ teaspoon. You can also add red chili powder if you want to make patties spicier.

4. If you want to bake the patties instead of frying, bake the zucchini patties at 204 degrees Celsius for twenty minutes. Turn the patties over and bake the other side for another fifteen minutes or until golden brown.

5. Store zucchini patties in an airtight container and refrigerate it for three to four days. You can also freeze these patties for three months and can be reheated again in the oven.
