Ingredients

1. Olive oil or any other vegetable oil - 2 tablespoons
2. Carrots, chopped - 1 cup (you will need three large carrots)
3. Zucchini, diced - 1
4. Bell pepper, deseeded and diced - 1
5. Onion, diced - 1
6. Garlic, minced - 1 tablespoon
7. Egg, beaten - 1
8. Dried parsley - 2 teaspoon
9. Dried basil - 2 teaspoon
10. Salt - add to taste
11. Black pepper - add to taste
12. Cottage cheese, low-fat - 2 cups
13. Mozzarella cheese, shredded - 2 ½ cups
14. Parmesan cheese, grated - ½ cup
15. Diced tomatoes - 1 large can (24 ounces) OR Homemade marinara sauce - 2 ½ cups

Directions

1. The initial step is to preheat the oven at 230 degrees celsius. Take a 9 by 13 - inch baking dish and grease it either with a cooking spray or vegetable oil and set this prepared dish aside.

2. Heat either olive oil or any other vegetable oil in a large skillet over medium-high heat. Add all the vegetables, i.e., diced carrots, zucchini, onion, and bell pepper. Also, add minced garlic. Add flavorings such as salt and black pepper. Cook and stir the vegetables for 3 to 5 minutes or until they are tender.

3. While the vegetables are cooking, take a separate bowl and combine egg, dried parsley, dried basil, cottage cheese, 1 ¼ cup mozzarella, and ¼ cup parmesan cheese.

4. Upon tenderizing of the vegetables, stir in a homemade marinara sauce in the skillet.

5. Also, boil the lasagna noodles according to the directions mentioned on the package.

6. Once they are boiled, spread ¼ of the marinara-vegetable mixture at the bottom of the prepared baking dish. On top of this mixture, place three lasagna noodles, ⅓ of the cheese and egg mixture, and another ¼ of the vegetable-marinara mixture.

7. Repeat the same steps two more times. Finish by sprinkling 1 ¼ cup of mozzarella and ¼ cup of parmesan cheese on top - cover the baking dish with foil. Before covering, spray the foil with a cooking spray.

8. For 40 minutes, bake the vegetable lasagna. After that, bake for another 10 minutes after removing the foil. When it is cooked, and the cheese is browned, take it out of the oven and let it stand for a few minutes.

9. Now, slice and serve this delectable vegetable lasagna.
