Ingredients

1. Potatoes, cubed - 2 cups
2. Green peas - ½ cup
3. Carrot, cubed - 1 cup
4. Beans, chopped - ½ cup
5. Coriander leaves - 3 tablespoons

OTHER REQUIRED INGREDIENTS:

1. Salt - ½ teaspoon
2. Ginger, grated or paste - ¾ teaspoon
3. Chilies, finely chopped - 1 to 2
4. Garam masala - ½ to ¾ teaspoon
5. Bread crumbs - 6 tablespoons
6. Oil - 4 tablespoons or as needed

1. Gram flour or rice flour - 2 tablespoons
2. Bread crumbs - ½ cup

Directions

1. Tenderize the vegetables by boiling them and then drain them out after boiling. You can use this vegetable stock in any of your other recipes.

2. After boiling these vegetables, transfer them into a medium-size mixing bowl and mash them well.

3. Now add breadcrumbs, salt, grated or paste form of ginger, garam masala, and chilies to the mashed vegetables. Combine all the constituents nicely to make a non-sticky dough. Breadcrumbs can be added more if needed to obtain a non-sticky dough.

STEPS TO MAKE VEGETABLE CUTLETS:

1. After preparing the cutlet dough, divide it into 13 equal parts. Make tiny dough balls by rolling them and then flatten them out to make thick patties. Set the vegetable cutlets aside on the plate.

2. Add ¼ cup of breadcrumbs on another plate and set them aside.

3. In a small mixing bowl, make a thin flour paste by mixing gram or rice flour with few drops of water. If you want to make a thick crust, then keep the batter thick.

4. Now dip the vegetable cutlets first in the batter bowl. Make sure to coat the cutlets from both sides. Then cover the cutlets with breadcrumbs.

5. For 10 minutes, let the cutlets rest on a plate and replicate these steps one more time.

6. Before frying, shake off the excess breadcrumbs from the cutlets.

STEPS TO FRY VEGETABLE CUTLETS:

1. In a wide, shallow frying pan, heat one tablespoon of oil. Upon the heating of the oil, gently place the vegetable cutlet in the pan.

2. From both sides, fry the cutlets until they become golden and crispy.

STEPS TO BAKE VEGETABLE CUTLETS:

1. To bake the vegetable cutlets, the first thing you need to do is for 15 minutes, preheat the oven at 180 degrees celsius.

2. Place the prepared patties on a greased pan, and for 15 minutes, bake the cutlets on each side.

3. Serve vegetable cutlets with green chutney or any other sauce of your choice.
