Directions
1. Take a deep saucepan and add butter and oil over medium heat. Heat the pot until the butter is completely melted and butter and oil begin to sizzle.
2. Upon sizzling, add rice, diced onion, and bell pepper. Cook until the white rice becomes golden brown and vegetables become soft and tender.
3. Add garlic and cook it for 30 seconds.
4. Now, add tomato sauce, chicken broth, lemon juice, and all the seasonings, i.e., salt, chili powder, black pepper, garlic powder, dried oregano, ground cumin. Stir everything nicely.
5. Bring all the contents in a saucepan to a boil and then reduce the heat. Cover the pan, and for 20 to 25 minutes, let this mixture simmer. Or simmer until the rice is tender, and all the liquid is absorbed.
6. As the rice becomes tender, remove the saucepan from the heat source and further allow the rice to sit for 10 minutes, covered.
7. Remove the lid, stir and fluff up the rice with a fork. Sprinkle fresh cilantro over the cooked rice and serve immediately.
WHAT KIND OF RICE YOU CAN USE TO MAKE SPANISH RICE?
Long grain rice works the best. But, you can also substitute long-grain rice with basmati rice as well. As compared to long grain rice, basmati rice won’t be that fluffy. You can also use brown rice instead of white rice, but remember that brown rice takes more time to cook than white rice.
