Directions
TO PREPARE FILLING:
1. Saute the finely chopped onions for 10 minutes in a little bit of olive oil and cook them until it turns pink.
2. After that, add ground beef, Lebanese 7-spices, and salt. Mix everything nicely and cook for 10 minutes or until the meat is properly cooked.
3. Once the meat is cooked, turn off the stove. Your filling is ready.
TO PREPARE THE DOUGH:
1. In a food processor, combine all the dough ingredients (you can also knead the dough by using hands) and allow it to rest for a few minutes.
2. Dust the kitchen counter with flour and place the kneaded dough on it. Flatten into a large disc; the thickness should be â…› - inch.
3. By using a bottle lid or a cookie cutter, cut the rolled out dough into discs. The diameter should be ¾ - inch.
4. Place the disc-shaped dough onto the plate. Make sure that the plate should be dusted with flour.
5. In the center of the dough, place ⅓ to ½ teaspoon of meat stuffing. Wrap the meat dumpling in such a way that you get a D-shaped dough. Join the ends of the D-shaped dough and flatten it to make it look like a hat.
6. Replicate the same steps for the rest of the dough cut-outs.
TO PREPARE THE YOGURT:
1. In a pot, pour six cups of water and 1 ¾ cups of thick yogurt. Mix these constituents so that yogurt is dissolved. On medium-low heat, place the pot on the stove and keep stirring it softly. Once it boils, turn heat to low.
2. Now, add all the seasonings, i.e., dried mint powder, dried cilantro leaves, salt, and lemon juice.
ASSEMBLING:
1. Once the yogurt sauce is prepared, add the Shish Barak dumplings. Boil this stew again and on a low heat stir it gently. The dumplings will take 15 to 20 minutes to cook.
2. Once the dumplings are cooked, serve Shish Barak hot as a soup.
