Ingredients

1. Spinach - 350 grams (1 ½ cups)
2. Tomato - 1 medium
3. Garlic cloves - 5 (Divide them. Must be three whole and two finely chopped)
4. Ginger - 1 inch
5. Green chili - 1 (You can add more to taste)
6. Oil - 1 tablespoon
7. Onion, finely chopped - 1 large
8. Water - ½ cup (or as needed)
9. Garam masala - ¾ to 1 teaspoon
10. Turmeric powder - ¼ teaspoon
11. Red chili powder - ¼ teaspoon (You can add more according to your taste)
12. Salt - add to taste
13. Heavy cream - 2 to 3 tablespoon (You can also add more for a more creamier flavor)
14. Paneer - 225 grams (Should be cut into cubes)
15. Kasuri methi, crushed - ½ tablespoon
16. Lemon juice - add to taste

Directions

1. BLANCHING AND PREPARATION OF SPINACH FOR MAKING PALAK PANEER

1. The first step for making palak paneer is to blanch the spinach leaves. For blanching, you will require a pot of boiling water. In this boiling water, add a little salt and then spinach leaves. Let the spinach leaves remain in hot water for about 2 to 3 minutes until wilted.

2. Upon wilting of the spinach leaves, take them out and soak them in ice-cold water. This procedure will help to retain the green color of the leaves.

3. The following step is to blend the blanched spinach leaves in a blender. Before blending the spinach, add tomato, three garlic cloves, ginger, and green chili. Blitz these ingredients together to form a smooth paste and set it aside.

2. STEPS TO MAKE PALAK PANEER

1. The initial step for making palak paneer is to heat oil in a skillet on medium heat. Once the oil sizzles, add the remaining chopped garlic cloves. Saute the chopped garlic until it changes color.

2. After that, add onion and cook until the chopped onions become soft and translucent.

3. Upon softening of the onion, add pureed spinach mixture and mix. Add ½ cup of water after mixing the mixture and then cover the pan. Let spinach puree cook on medium heat for about 10 minutes. The spinach puree will bubble a lot, but make sure to stir at regular intervals to avoid sticking of spinach puree at the bottom of the skillet.

4. Once it is cooked, add all the spices, i.e., garam masala, turmeric powder, red chili powder, and salt. Give this mixture a nice stir and let it cook for 1 minute.

5. After cooking for a minute, add heavy cream and mix again.

6. The last step is to add the cubed paneer into the spinach puree and mix them. Let palak paneer simmer for about 3 to 4 minutes and then switch off the flame.

7. Finally, add lemon juice and Kasuri methi. Mix everything thoroughly.

8. Serve this tasty palak paneer with either naan, roti, or rice.
