those who are vegan or for those people who want to enjoy pasta without meat.
For vegans, one more thing I want to
highlight here is that you should use soy milk to make a creamy garlic pasta.
As, soy milk is thick and will give a creamier texture as compared to milk like
almond milk, coconut milk, etc.
The recipe below
will satiate your cravings for the hot-piping creamy garlic pasta.
Ingredients
1. Olive oil - ½ tbsp
2. Garlic, minced - 4 cloves
3. Onion, finely chopped - 1
4. Salt - according to taste
5. Oregano - to taste
6. Crushed chili flakes - to taste
7. Black pepper - according to taste
8. Milk - 1 ½ cup
9. Fettuccine pasta - 1 cup
10. Coriander or parsley - for serving
Directions
1. Over medium heat, heat olive oil in a large pan. You can use smaller pans too. But stirring in smaller pans will make it problematic to carry out the procedure smoothly
2. For 2 minutes, cook garlic and onion with a pinch of salt. Occasionally stir until the garlic becomes soft and onion has turned translucent.
3. Now add vegetable broth, milk (soy milk if you are vegan), seasonings, and salt. Stir it well.
4. Add dry pasta into this liquid.
5. Boil this liquid and then reduce it to a simmer. Separate pasta strips that are sticking together.
6. Cook until the sauce has thickened or until you get the desired texture.
6. Add more seasonings if you like and garnish it with coriander or parsley whichever is easily available.
Immediately serve hot. If there are leftovers, then you can refrigerate it for 3 to 5 days.
ADDITIONAL NOTES FOR THIS RECIPE:
1. You can add cheese, i.e., Parmesan, mozzarella or cheddar if you like to make it cheesier.
2. You can add boiled minced chicken as a variation in the sauce for non-vegan.
3. You can use other different shaped pasta. Be mindful of the cooking time because it will be different.
4. The simmering process in step 5 should be gentle; otherwise, all the liquid will cook-off.
