Chicken noodle soup is served as an appetizer or a
main course and it is considered as a “comfort food” in many countries. It is a
very healthy, flavorsome, and satisfying soup. Classic chicken noodle soup is
one of the easiest soups to prepare. The ingredients are readily available and
are inexpensive.
This homemade chicken noodle soup is full of flavor
and it will be your new go-to recipe because this recipe hardly takes less than
45 minutes to prepare. Chicken noodle soup is fulfilling, low in calories and
it is loaded with vegetables, chicken broth, chicken and noodles.
To prepare the best chicken noodle soup, use darker
meat i.e., chicken thighs as it becomes tender and softer in a soup. Egg
noodles are usually utilized but you can also use any pasta of your choice.
Herbs are very essential for this soup, so make sure to season soup well with
herbs.
Ingredients
1. Butter - 2 tablespoons
2. Onion, chopped - 1 large
3. Carrots, chopped - 2 large
4. Celery, chopped - 2 stalks (optional)
5. Minced garlic - 4 cloves
6. Bay leaves - 2
7. Dried thyme - ½ teaspoon
8. Boneless chicken thighs - 4 to 5 thighs
9. Chicken stock - 8 cups
10. Egg noddles or any pasta of your choice - 5 ounces or ½ cup plus 2 tablespoons
11. Salt - add to taste
12. Black pepper - add to taste
13. Parsley, finely chopped - ¼ cup
14. Water or stock - add as needed
Directions
1. Firstly, melt butter in a large cooking pot. Sauté the onions, carrots, and celery and stir every few minutes until the vegetables begin to soften.
2. Add bay leaves, garlic, and dried thyme and stir it for about 1 minute.
3. Now pour in chicken stock in your large pot and let it simmer.
4. Taste the stock and adjust the seasonings, i.e., salt and pepper accordingly.
5. Add chicken thighs and let it submerge into the stock. Place the lid on to the pot and cover the pot partially. Stir the soup a few times until the chicken thighs are cooked properly. It will take about 20 minutes.
6. You can add more stock or water if the broth seems less. Once, the chicken is cooked transfer the chicken thighs on to the plate.
7. Add the noodles into the soup and stir it well. Cook the noodles until done. The time may vary depending on the type of noodles used.
8. Shred or dice the chicken thighs and put it back into the large pot. Again taste the soup for seasonings and adjust it accordingly.
9. Garnish the chicken noodle soup with parsley and serve it immediately.
