Ingredients
FOR TENDERIZED CHICKEN:
1. Chicken breast, thinly sliced - 180 g
2. Baking soda - ½ teaspoon
FOR SAUCE:
1. Cornflour - 1 tablespoon
2. Soy sauce - 1 ½ tablespoon
3. Oyster sauce - 2 teaspoon
4. Oil - ½ teaspoon
5. Black pepper - add to taste
6. Chicken broth - ¾ cup
FOR STIR-FRY:
1. Vegetable oil - 1 ½ tablespoon
2. Garlic cloves, finely chopped - 2
3. Onion, sliced - ½
4. Carrot, medium, thinly sliced - 1
5. Mushrooms - ½ cup
Directions
1. To prepare chicken for chop suey, you first have to tenderize it. To tenderize the chicken, put the chicken in a bowl and sprinkle baking soda over it. Mix the chicken well and set the bowl aside for 20 minutes. After 20 minutes, rinse the chicken well and pat it dry with a paper towel. Keep it aside.
2. The second step is to make the sauce. To prepare the sauce, take cornflour and soy sauce in a bowl and mix until it is free of lumps. Now add all the remaining ingredients of the sauce into the bowl and stir it well.
3. The third step is to stir-fry vegetables and chicken. To stir-fry, heat skillet with oil over high heat then add garlic. Stir garlic quickly and add the onion. Cook onion till translucent (about 1 minute).
4. Upon wilting of the onion, add chicken and cook it well.
5. Now, add mushrooms and carrots and stir for a minute. They should be tender, not soggy.
6. The last step is to add the sauce. Stir all the ingredients well in a skillet until the consistency of the sauce becomes thick.
7. Remove the skillet from heat. Pour this thick gravy over noodles or rice and serve immediately.
