Ingredients

7. Brown sugar - 1 cup
8. Vanilla extract - 1 teaspoon
9. Eggs - 4 large
10. Carrots, grated - 3 cups
11. Pecans, chopped - 1 cup
12. Raisins - ½ cup

CREAM CHEESE FROSTING:

1. Cream cheese block, full-fat - 225 grams
2. Whipping cream - â…“ cup
3. Powdered sugar - 1 ¼ cups
4. Chopped pecans - ½ cup

Directions

STEP 1: MAKE THE BATTER:

1. The foremost step is to preheat the oven at 176 degrees celsius. Take two 9-inch round cake pans and apply grease. Also, place parchment paper at the base and grease it too. You also grease and dust the base and sides of the pan.

2. Take a medium-bowl and amalgamate by whisking salt, flour, baking soda, and cinnamon.

3. Now, take a separate bowl and combine oil, brown and granulated sugar, and vanilla. One at a time, whisk in eggs until it is well combined.

4. Next, by using a rubber spatula, scrape the sides of the pan. In three parts, add the dry ingredients and combine them. Also, integrate carrots, raisins, and nuts.

STEP 2: BAKE THE CAKE:

1. Now, divide the batter into prepared pans. For 35 to 45 minutes, bake the cake until it is springy to touch, and a toothpick should come out clean when thrust into the middle.

2. For 15 minutes, cool cake in pans and then peel off the parchment paper.

STEP 3: TO FINISH THE CAKE AND PREPARING CREAM CHEESE FROSTING:

1. With the help of a handheld mixer, beat cream cheese on medium speed in a large bowl. Beat for one minute or until it is creamy.

2. Next, beat in powdered sugar ¼ at a time until it becomes fluffy.

3. Now, pour in the cream and beat further for one minute on medium speed.

4. Cover and chill the frosting until ready to frost the cake.

5. After the complete cooling of the cake layers, on one cake layer, apply cream cheese frosting on top and place the other layer on top. Decorate the top of the cake with the remaining frosting. You can leave the sides unfrosted. Sprinkle nuts on top of the frosting.
