Directions
1. To first step to prepare this delicious deep-dish pizza is to take a large bowl and mix 1 ½ cups flour, cornmeal (substitute cornmeal with cornflour if you don't have cornmeal), yeast, sugar, and salt. Now, in a saucepan, heat water and oil. After heating, add this into the dry ingredients bowl and beat it until moistened. To form a stiff dough, add the remaining flour into the large bowl.
2. Take this dough out on a floured surface and knead it for about 6 to 8 minutes until it is smooth and elastic. After kneading, place this dough in a greased bowl and turn the dough once, so you have a greased top. Cover the bowl. Let the dough rise by keeping the bowl in a warm place. It will take 30 minutes for bread to rise.
3. Create an indentation by punching the dough down, and divide the dough in half. Roll each dough into an 11-inch circle. Now, take two 10-inch ovenproof cast-iron skillets or pans and press the rolled dough onto the bottom and up the sides.
4. The following step is to put the toppings on top of the dough. Sprinkle mozzarella cheese on each dough.
5. The next step is to take a large bowl and mix tomato sauce, tomato paste, and seasonings very well. Now spread 1 ½ cups of tomato sauce over each pizza. Layer each pizza with half of the sausage, pepperoni, olives, one cup of mozzarella and two tablespoons of parmesan cheese.
6. In a cast-iron skillet, bake these two pizzas covered for 35 minutes at 232 degrees Celsius. Bake the pizzas again uncovered for 5 minutes until they are lightly browned.
