HOW MANY TOMATOES ARE THERE IN A POUND?

One pound of tomatoes is approximate: (remember a 28 ounce can have approximate 2 lbs. )

  2. Medium tomatoes – 3
  3. Chopped tomatoes – 2 ½ cups
  4. Whole tomatoes, peeled – 5 to 6

Ingredients

1. Unsalted butter - 4 tablespoons (use oil instead of butter for vegans)

2. Onion, large cut into wedges - ½

3. Canned tomatoes - 1 (28 ounces) can (you can use fresh tomatoes instead of canned tomatoes)

4. Garlic, peeled - 3 cloves

5. Bell pepper (red), diced - 1/2

6. Water, vegetable stock or chicken stock - 1 ½ cups

7. Salt - ½ teaspoon or add to taste

8. Black pepper - add to taste

9. Dried basil - ½ teaspoon

10. Dried oregano - ½ teaspoon

Directions

1. The first step to make tomato soup is to melt butter in a large saucepan over medium heat.

2. If you are using fresh tomatoes, then wash and chop the tomatoes into quarters or eighths.

3. Now to make the soup add all of the above ingredients, i.e., onions, canned or fresh chopped tomatoes, garlic, bell pepper, water or stock, and the flavorings.

4. Stir and bring all these ingredients to a simmer.

5. Cook uncovered for 40 minutes. Make sure to stir the mixture occasionally.

6. The concluding step is to blend the soup. You can use a stand blender or a hand blender. (If you are using stand blender make sure to cool the soup and then blend). The soup doesn’t have to extra super smooth; some texture in the soup gives a nice touch.

7. After blending the soup, season to taste and serve immediately. You can top this tomato soup with croutons or Parmesan cheese. It is totally up to your choice
