Chickpea spinach salad can be served as a light main course or as a colorful side salad. These versatile chickpeas and spinach are sprinkled with spices and are dressed in lemon and honey.

Ingredients

1. Chickpeas, boiled, drained and rinsed - 29 ounces or 822 grams
2. Spinach, chopped - 1 handful
3. Bell pepper, deseeded and chopped - ½ (optional)
4. Tomatoes, chopped - ¼ to ½ cup (optional)
5. Feta cheese - 99 grams

INGREDIENTS REQUIRED FOR DRESSING:

1. Raisins - 1 small handful
2. Lemon juice - ½ tablespoon
3. Honey - 3 teaspoons
4. Olive oil - 4 tablespoons
5. Cumin - ½ to 1 teaspoon
6. Salt - 1 pinch
7. Chili flakes - ½ teaspoon
8. Black pepper - â…› teaspoon

Directions

1. The first step is to chop the feta cheese and add it with chickpeas and spinach in a large bowl. Add bell pepper or tomato if you like.
2. Now you have to prepare the dressing. For the dressing, combine honey, lemon juice, oil, and raisins in a small bowl.
3. Add all the seasoning, i.e., cumin, chili flakes, salt, and pepper into the dressing and mix well.
4. Drizzle this delicious dressing on to the salad you just prepared.
5. Toss it so that the salad is evenly coated with the dressing.
6. Serve and enjoy.
